The Story Behind Verde – Chef Christian Barruos-Brens

At 16 years old, Chef Christian Barruos-Brens took to the kitchen when his mother was diagnosed with cancer. Determined to nourish her through treatment, he discovered that food was more than just sustenance—it was medicine, comfort, and love.

Years later, as she battled cancer a second time and survived, Christian deepened his commitment to clean, anti-inflammatory eating. Seeing firsthand the impact of real, wholesome ingredients, he set out to create food that fuels both body and soul—without seed oils, additives, or compromise.

In 2024, his vision became a reality when he won the Idea Center’s Launch Food Cart Pitch Competition at Miami Dade College, receiving a $7,000 grant to bring Verde to life. That funding allowed him to officially launch Miami’s first clean, Latin-inspired food cart, dedicated to bold flavors, real ingredients, and a new approach to healthy eating.

Verde is a tribute to his mother’s strength, his roots, and his passion for food that is both delicious and nourishing.
